Sweet Potato Pancakes (Half Win)

Hey!!!
So lately I’ve been wanting breakfast breads, like waffles and pancakes. Since I’m dieting I have to find a different way to eat these things. So today after searching Pinterest, I’m trying something new, sweet potato pancakes.

Okay so this is what I use and its nutritional value:
PB2 with chocolate, 2 tbsp: 45 cal 6 carb 4 g protein
Cinnamon, to taste: 0 cal 0 carb 0 protein
Stevia, to taste: 0 cal 2 carb 0 protein
2 eggs: 140 cal 0 carb 6 protein
-2 medium sweet potatoes: 250 cal 27 carb 4 protein

This all totals: 435 calories, 35 carbs and 14 protein. Now this may sound like a lot, but you will only be eating a small portion of this. After making a large pancake for myself and smaller pancakes for my boyfriend I still have over half of the batter left.

Okay really quick, I want to talk about this peanut butter alternative. It’s called PB2. Basically, it’s peanut butter that’s been pressed to remove the oil which in turn reduces the fat and calories. And it’s still delicious. Look below, the proof is in the nutritional facts.

Now here are pictures of the other ingredients that I used.

First, cook your sweet potatoes either in the microwave or the oven. Then mash them in a bowl.

After mashing the potatoes, at all other ingredients.

Mix until you have sweet potato goop lol

Now cook your sweet potato pancakes just like you would normal pancakes. Flipping the pancakes can be a little tricky though, as they tend to fall apart pretty easily. Plus I suck at flipping pancakes anyway 😕

I meet my boyfriend’s pancakes almost the same way. Instead of stevia, I use plain sugar. And I also made his pancakes smaller. They were a lot easier to flip.

As mentioned in the title, this was a half win. My pancakes were a little thick, almost like cake texture. But my boyfriend’s pancakes turned out pretty good. I don’t know if it’s because I made his with sugar or if it’s because his were smaller. Next time I’ll add a banana to mine, or maybe more stevia. Give them a try yourself and tell me what worked and did not work for you.

Runner’s Problems…Something I thought I’d never have

Hellooooo!

So you guys know I started running about 3 weeks ago, and I started running outside about two weeks ago. I’ve told you guys how I feel about it…but it’s getting better. Except for one problem….BUTT PAIN.

I’ve been having a shooting pain in my butt cheeks when I go from sitting to standing. This didn’t start until after I started running. It almost feels like when a limb “falls asleep” and when the circulation comes back you feel a quick pain. After discussing it with a couple of friends I’m almost sure it’s sciatic pain. So I may need to go to a chiropracter. Now I can really say that running has been a pain in my ass (*slaps knee* I crack myself up)

Anyway I wanted to share because I didn’t know if any runners out there had the same experience; And to say…I’m kinda sucking, but I’m still doing it! What’s you’re excuse??

Weight loss journey: Check in #8

Ughhhh!! Does not even sum ip my frustration. But it’s not a compete fail yet…hear me out

This past week I only lost 2 pounds…and to that I say WTF!!??

I’ve stuck to the rules of paleo. I’ve worked out more times this week than I ever have. I worked out at a pretty high intensity. So pretty much I’ve done everything I was supposed to do! All for what, 2 pounds?? As far as I was concerned this diet was OVER!

As you all know..my biggest motivation to keep going forward is results and being held accountable. So, after a few disapproving looks from my boyfriend and a conversation…I did not stop. Wtbs I’ve looked at pictures I’ve taken periodically and comparing them, and it’s apparent that I’m losing weight. I believe that I’m also putting on muscle though…which would explain the whole 2 pounds thing

Our concert is this weekend and I’m so excited! I don’t plan on strictly sticking to my diet…but don’t worry Ray (my bf) will be there to stop any crazy eating dead in it’s tracks LOL

Weight Loss Rant!!!

Good morning everybody!!!

I’m having a great day so far! It’s day 29 of my weight loss journey and I’m down 20 pounds!! & did I mention I feel great!!!!

I’ve been working out with my trainer Kenya Crooks (facebook: kenya crooks and the real results experience) and now it’s time for me to continue on my own! Go check out his page I believe he has a special going on this week! Tell him I sent you! He works with people all over the world with his diet plan and online workouts as well as one on one and group workouts in the South USA! I’m so proud off myself and where I’m going with this. The sky is the limit!!!

Hey y’all

    Ok so a couple of things! I have closed the RSVP for my housewarming and it’s time to put plans into action!! I’m so excited!! Anyway…The date is June 1st and I have a goal weight (which is a secret of course!) Anyway I’m working out with the famous trainer Kenya Crooks. He is the trainer of the stars. He is very prominent in the Atlanta area and is making a name for himself all over the nations. Anyway I started on April 17, and I’ve lost 13 lbs and I feel great!! That’s 13 lbs in 16 days (and those days include some “womanly” things going on) Check him out on Facebook. Just search “Kenya Crooks and the real results experience” Check out his plans. You can do one on one, groups, and online. It includes a meal plan. He is stationed in Atlanta and has group workout areas all over the metro Atlanta and even in South Carolina! So far I am a success story and he has a lot others on his page. He has a great personality, keeps you motivated, but also keeps you in check.  I’m trying to be “summer time fine”! and I’m getting there. I have 31 days to go and 37 pounds left to lose.     Ok so about this outfit. I’m going in today at the gym as soon as my boyfriend goes to work; and I’m workin this fit today! The shorts are good for hold your stomach in for the workout and they make my butt look good LOL! I have a high-compression sports bra because my boobs are kind of on the large side and I need some good support. Hair? Gonna be bunned up with a cute head scarf because no one wants to run with hair in their face. To round it up I have good running shoes and headphones to keep me amped up. Usually I watch Netflix on my phone when I’m at the gym. It gives me incentive to workout through a whole movie without watching the clock. If you work out with Kenya Crooks…you won’t need headphones lol
