Quick, Fast and Paleo Stew

I am sick….and I mean snotty, sneezy, coughing sick. But I still needed to make dinner for my boyfriend and me. But I needed something fast and easy. I looked in my cabinets and just threw together a stew

Ingredients:
Ground beef
1 can green beans, drained
1 can corn, drained
2 cut up carrots,
Hot sauce

You just brown the beef and then throw all the other stuff in. Done and done.

For your non paleo family add cheese or garlic toast

Ok couple of things…
Rainbow: love them, love the style especially for plus size. They have a lot of options and they are usually my go to when I need something to go out in but don’t have a lot of time to look or a lot of money to spend. The thing is…don’t expect to much use out of the clothes. I’ve noticed after about three washes…I find a whole or a snag somewhere in the clothes so be careful

The other thing: MEN ARE FRIGGIN EXPENSIVE!!! His shirts were both 30ish dollars!! I can get a whole outfit for that!! But he’s worth it so I got them and they both look nice and seem high quality when it comes to the material.

Ughhhh!! Does not even sum ip my frustration. But it’s not a compete fail yet…hear me out

This past week I only lost 2 pounds…and to that I say WTF!!??

I’ve stuck to the rules of paleo. I’ve worked out more times this week than I ever have. I worked out at a pretty high intensity. So pretty much I’ve done everything I was supposed to do! All for what, 2 pounds?? As far as I was concerned this diet was OVER!

As you all know..my biggest motivation to keep going forward is results and being held accountable. So, after a few disapproving looks from my boyfriend and a conversation…I did not stop. Wtbs I’ve looked at pictures I’ve taken periodically and comparing them, and it’s apparent that I’m losing weight. I believe that I’m also putting on muscle though…which would explain the whole 2 pounds thing

Our concert is this weekend and I’m so excited! I don’t plan on strictly sticking to my diet…but don’t worry Ray (my bf) will be there to stop any crazy eating dead in it’s tracks LOL

Key Lime Parfait

Ingredients
  For the graham cracker crumble
  • 3 tablespoons unsalted butter
  • 2 tablespoons white sugar
  • 1 tablespoon light brown sugar
  • 1/2 cup graham cracker crumbs 

For the sweetened whipped cream

  • 2 cups chilled whipping cream 
  • 1/4 cup powdered sugar
  • Pure Vanilla Extract
  • Use one cup for the Key Lime cream and one cup for the topping

For the Key Lime Cream

  • 1 14-ounce can sweetened condensed milk
  • 1/2 cup fresh lime juice
  • One cup sweetened whipped cream
  • 1 drop of green food coloring (optional)
Directions
Melt butter in heavy small skillet over medium heat. Mix in brown sugar and stir until bubbling, about 1 minute or less. Mix in crumbs; stir until color deepens, about 3 minutes. Turn out onto plate and cool. 
For whipped cream topping, beat 2 cups whipping cream in bowl until stiff peaks start to form. Add 1/4 cup powdered sugar and 1 teaspoon vanilla. Make sure the bowl and the beaters are cold. It helps if you put the bowl in the freezer and the beaters 10 minutes before you make the whipped cream. 
Using electric mixer, beat cream in medium bowl until firm peaks form; hold 1 cup of whipped cream for key lime cream mixture.  Save the remaining whipped cream for topping the parfaits. Set aside while you make key lime cream.
To make the Key lime cream, stir condensed milk, lime juice, green food coloring, and one cup of whipping cream topping in large bowl to blend (mixture will thicken).
Place 1/4 cup lime mousse in each of six 8- to 10-ounce wine goblets. Top each with 1 tablespoon crumb mixture, then 1/4 cup mousse. Top parfaits with remaining crumb mixture. Refrigerate at least 1 hour and up to 4 hours. Just before serving, add a generous dollop of whipped cream.

Skillet Chicken Divan (Dairy-Free)

Classic casserole material is coming your way. Ever heard of Chicken Divan? It’s a pretty straight forward casserole of chicken and broccoli that has made its fair share of appearances at potlucks everywhere. In addition to being a creamy, cheesy concoction, it is uniquely seasoned with curry powder (and sometimes sherry vinegar). Sounds kinda strange to add curry to this, but when it comes together in one creamy bite, you’ll understand why this casserole has been around so long. It was one of my pre-Paleo favorites.

We’re gonna mimic the cream-of-somethingrather soup and cheddar cheese by soaking and pureeing cashews. Vegans do this all the time, since they too avoid dairy. And instead of topping our casserole with buttered breadcrumbs, I’m using flaxseed meal. Who doesn’t love a little Omega-3’s slipped into their dinner? Well, I mean, unless you’re talking about a squeeze of fish oil… Let’s stick to flax!

My Healthier Hot Wings/Mustard Wings

I wanted some wings but fried  greasy wings is not what I need right now while I’m trying to lose weight. So I’ve come up with a different recipe so you can eat wings guilt free. 5 wings is only about 270 calories versus 1 fried and floured wing which is about 100 calories per wing

Ingredients:
Wings
Red Pepper
Cayenne Pepper
1 tbsp Butter
Sea Salt
1/2 cup Hot Sauce
Mustard (dijon)
Cooking Spray

Step 1:
Wash wings. Then put wings in pot with enough water to cover them. Add the cayenne pepper, red pepper and salt to the water. Let wings boil for 15 minutes.

Step 2:
Put oven on broil (high). Put boiled wings on a cookie sheet sprayed with cooking spray. You don’t want the skin to stick to the foil. Broil wings for 10 minutes (or until crispy) on each side. If you want the wings crispier broil them longer…just be careful not to burn them.

Step 3:
While waiting for wings, combine the Hot Sauce and butter (or margarine, which ever you want)
in a microwave safe container and cook in microwave for 2 minutes or until melted. In another container put you dijon mustard. You can try whatever sauce combination you want as long as you keep your caloric content low.

Step 4:
When wings are done, shake em in whichever sauce you want and enjoy!

Love this recipe and I’ve gotta try it!

This stuff is AWESOME. No flour, no eggs, no dairy, no refined sugars. Its just the bite of sweet I need with no blood sugar spikes and I’m not hungry 20 minutes later. It tastes so good, you’ll be shocked that it isn’t bad for you!

I got the recipe (along with LOTS of other great Paleo recipes) Here But I’ve altered it a bit and heres the breakdown:

Ingredients:

1 3/4 cups Almond flour or Almond Meal
3 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1/3 cup. melted coconut oil
2 tbsp. honey
3 tsp. Vanilla extract
3 apples (I used Pink Ladies) peeled, cored and sliced to your liking.
1 cup unsweetened apple sauce

To Make:

Preheat oven to 350 degrees.

1. Peel, core and slice apple. Place apples in a baking dish (I used a pie plate).

Weight loss journey: Check in #7

Ok this last week has been rough. I have been having some type of digestive issue going on. This will be TMI lol but I have been really gassy but haven’t had a BM in two or three days which is NOT normal for me. I feel bloated. And since last Monday I’ve only lost 2.6 pounds. Whatever is going on with me has to be the culprit.

But it’s okay because I’m still on track! As of today I’ve lost 10.2 pounds and my goal was 8 pounds so I’m still ahead! I’m going to switch things up this week. I’m going to work out twice a day some days and I’m going to eat more often. I’m also going to go to the doctor this week to make sure everything is ok medically. Let’s do this!!!!
