Cheese Stuffed Shells

Boil jumbo shells according to the directions on the box.

Mix 1/2 cup of ricotta cheese, 1/2 cup of mozzarella cheese, and 1/2 cup of parmesan cheese and 1 egg. Then add a little parsley, basil, salt, and pepper to taste.

Cover the bottom of your pan with spaghetti sauce of choice. Top with shells (opening side up). And fill shells with your cheese mixture.

Afterwards, cover top with remaining sauce and sprinkle top with parmesean cheese

Bake at 350° for 20-30 minutes.

Ingrеdiеnts:
1 (8 ounсе) loаf Frеnсh brеаd

6. Bаkе in prеhеаtеd ovеn until buttеr is mеltеd аnd brеаd toаstеd, 15 to 20 minutеs.

Peeps Chick Surprise Inside Cupcakes

DIRECTIONS

1. Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups.

2. Make cake batter as directed on box. Divide batter evenly among muffin cups (about two-thirds full). Bake as directed on box for cupcakes. Cool in pans 10 minutes; remove from pans to cooling rack. Cool completely, about 30 minutes.

3. Using melon baller, scoop out center of each cupcake, about 1 inch deep. Fill each with 1 heaping teaspoonful candies.

4. Spoon frosting into medium bowl; stir in enough food color until desired green color. Frost cupcakes with frosting; sprinkle with colored sugar. Top with yellow PEEPS® chick. Store loosely covered.

Easter Egg Cookies

In a stand mixer, beat cream cheese, butter, egg, and sugar. Add vanilla. In a separate bowl, mix together flour, baking powder and salt. Gradually add the flour mixture to the sugar mixture while beating on low speed. Divide the dough into four balls and knead the food coloring into each portion of dough until the color is even. Wrap in plastic wrap and refrigerate for one hour. Unwrap each and press a small portion of each color dough together. Roll into a 12 inch rope and coil the rope into a circle. Pinch the dough together on one end to create an oval “egg” shape. Repeat for remaining dough. Bake on a greased cookie sheet at 350 for 8-10 minutes or until edges are just slightly browned. Cool on wire racks. Melt white chocolate chips in microwave according to package directions and drizzle over cooled cookies. Store in an airtight container in the refrigerator until ready to serve.

Cereal Easter Eggs

DIRECTIONS: 1. In a large pan melt butter using medium heat.

2. Add marshmallows and stir until melted.

3. Pour in the cereal and mix to incorporate.

4. Spray plastic eggs with cooking spray. I found it was easiest to use eggs that split vertically. You could just use 1 or 2 eggs for this process as the cereal does not take long to take the shape of the egg.

5. Spoon the cereal mixture into each half of the egg then close egg to form shape. Pop cereal out after about 10 seconds.

Dinner under 500 Calories: Pork Loin Over Feta and Spinach & Baked Apples

Hey ya’ll!

So I decided to get a little creative tonight with dinner….which is so hard for me with healthy only restrictions lol smh

Pork Loin
I left out the loin until it was room temperature. I’m an “as you go” kind of cooker so I’ll try to explain things. I covered then in olive oil and seasoned to my liking with garlic salt, onion powder, seasoning salt and italian seasoning (from Kroger). I browned one side with the oven on 6. Then flipped them over on the other side and turned the oven down to 4 and let them cook for about 3 Beyonce songs (LOL) so about 15 minutes. As they cooked I poured in chicken broth (just enough for the bottom of the pan) and then I poured a little Italian dressing over them. They were so tender and juicy.

Feta Spinach
This was super easy. Cut and put in a skillet on medium until the spinach wilt. Add a little salt and pepper to taste. Remember to cut up double the amount you think you will need because they do shrivel down ALOT! Put on your plate and top with Sundried tomato and basil feta (from Kroger)

Baked Apples
Cut apple in slices and but in a small pan. Add a little apple juice just to cover the bottom of the pan.

Top apples with cinnamon and nutmeg. Bake @ 400° for 1 hour, covered. *Note: The peel is the most nutritious part of an apple…but I didn’t like the peel baked…I suggest taking the peel off before cooking

Pork Loin 211 calories
Spinach 7 calories
Feta 80 calories
Baked apples 160 calories

Total: 458 calories!!!
Awesome for dinner and I’m stuffed!
Compare that to a Whopper with cheese (no sides) at 760 calories!!!

First Try at Making Lasagna

Hey ya’ll!

So today I tried making lasgna from scratch from the first time. I kinda winged it LOL. I read the ingredients on the boxed lasagna and figured out my own plan of action. This is a fool proof, easy recipe.

Ingredients:

1 lb Ground beef
1 lb Ground sausage
30 oz Ricotta cheese
Italian seasoning (oregano, basil)
Ragu sauce (romano/ parmesan)
Pizza blend cheese (sounds crazy but it’s perfect because it’s just a mozzarella and parmesan cheese blend)
Lasagna noodles
Olive oil
Eggs
Salt, pepper

Directions:

1. Preheat your oven to 400°.
Brown your sausage and ground beef

2. Boil about 15 lasagna noodles. Make sure you stir often so that the noodles don’t stick to your pot.

3. When the noodles are done, drain and place on a towel until you are ready to use them. Don’t use cheap paper towels for this (like I did) because the noodles will stick to them.

4. Make cheesy mixture. Mix the pizza cheese, ricotta cheese, and eggs. And italian seasoning.

5. Layer : Meat, noodles, cheese mix, sauce, repeat again

6. Cover with foil and put in oven for 40 minutes

7. Pair with a glass of wine and enjoy!

Of course I didn’t wait for it to cool so it’s messy on my plate lol. Wait about 10 minutes before you dig in. Oh and I forgot to mention….it was delicious!!

Grilled Cheese Rolls

Sandwich bread.

Start out with your favorite sandwich bread. Any kind will do!

Use a rolling pin to flatten the sandwich bread.

Then use a rolling pin to flatten each slice.

Cut off the bread crusts, if desired.

If you’re anti-crusts, you can cut off the crusts (like I prefer!).

Layer bread slices with American cheese.

Then layer each piece of flattened bread with a piece of American cheese.

Roll each up into a single roll.

Carefully roll each piece of bread into a tight little roll.

Melt butter in a skillet and grill the rolls.

Then melt a tablespoon or two of butter in a skillet over medium heat, and place each grilled cheese roll seam-side down in the skillet. Press down with a skillet to keep the roll from unraveling. Cook on all sides until the bread is toasted and the cheese is melted.

Use Progresso Tomato Soup as a dipping sauce.

Then get your extra-delicious “dipping sauce” ready – some Progresso tomato soup!

Serve immediately while that cheese is still warm and gooey.

I was going to throw a Halloween party but instead I threw a surprise party for my boyfriend this week (Happy Birthday Ray!)

Since I won’t be using them, I’ve decided to share these Halloween party foods with you!

Vomit Dip

Use avocado or spinach dip and pair it with chips or crackers.

Trail the dip out of the pumpkin to add the gross effect

Blood Jello Shots
This is one of my faves!

Make 1 pkg of strawberry or strawberry kiwi jello according to the box instructions. Then mix in 1/2 cup vodka,

1/4 cup Midori/melon liqueur and 1/4 cup peach schnapps. Draw the liquid up in the syringes and refrigerate overnight!

Cannibal Feast

Gross looking…I know LOL

Get a skull from any arts and crafts store (Hobby Lobby or dollar store) and cover with lunch meat

Use spare ribs as the chest cavity. A bell pepper is the heart, 2 chicken thighs for the lungs, and link sausage for the intestines.

And of course it all has to be slathered in BBQ sauce!

Finger Food

Cut knuckles into mini wieners and also cut the front of the top off. Boil. Add blood (ketchup) to the top and bottom of the wiener.

Add a nail (onion) for the finished look!

Dirty Q-Tips

Large toothpicks with peanut butter (or caramel) dipped marshmallows on both ends

Kitty Litter Cake

 Bake 2 cakes (chocolate and yellow) and crumble. Make 1 box of instant vanilla pudding and chill. Grind 1 package of golden Oreo cookies in a food processor until a sandy consistency. Separate 1/4 cup of the ground cookies in another bowl and mix in five drops of green food coloring. Mix crumbled cake, large portion of ground cookies, and pudding and put in a pan or NEW kitty litter box. Put several unwrapped Tootsie Rolls in the microwave for 12 seconds or until soft; then shape them into poop. Place them in and on top of the cake, randomly, covering some with “litter.” Add the green-specked cookies as scent crystals. Refrigerate until ready to serve.

Pepperoni Pizza Roll Ups

Ingredients:

8 Crescent Rolls

Sliced Pepperoni

Mozzarella String Cheese

Garlic Powder

Butter

Marinara (if you want to get fancy)

 

 

 

 

 

Directions:

Preheat oven to 350 degrees. 

Take each triangle of crescent roll dough and place about 4-6 pepperoni on the bottom of the triangle. Place half of a cheese stick on top and roll up. If you wanna be fancy, put a little marinara in the roll before rolling up. Place seam side down on a cookie sheet and bake for 10-14 minutes or until golden brown.

While rolls are cooking (with about 3 minutes left), spray with butter and dash a little garlic powder on top of the roll ups.

Serve with marinara or ranch for dipping.

 

 

 

 

 

Cajun Pot Pie

Hey ya’ll,

I haven’t come up with a recipe in a while so I decided I’d give one of my own ideas a try. I wanted pot pie and I wanted to give my boyfriend a taste of home (Louisiana). So I made Cajun pot pie!!

Ingredients:
Spicy Andouille Sausage
Chicken Breasts
Okra
Corn
Onions
Louisiana Cajun Gumbo Mix
Bisquik biscuit mix
Boil In Bag Rice
Butter

Season chicken and cook. Boil sausage. Boil the rice in the same pot as your sausage.

While the meat and rice is cooking, prepare your bisquik mix as the bag instructs.

Combine gumbo mix and 2 qts water or chicken broth. Bring to a boil. Make sure there are no lumps!

Cut up the meat.

Once mixture comes to a boil add meat and veggies. Boil until veggies are done.

Put rice in the bottom of a pan, then spoon mixture on top of it(do not over fill) and cover with bisquik mix. Put in the oven on 450° for 10-15 minutes. Leave a little on the side to add on your plate later.
