Dinner under 500 Calories: Pork Loin Over Feta and Spinach & Baked Apples

Hey ya’ll!

So I decided to get a little creative tonight with dinner….which is so hard for me with healthy only restrictions lol smh

Pork Loin
I left out the loin until it was room temperature. I’m an “as you go” kind of cooker so I’ll try to explain things. I covered then in olive oil and seasoned to my liking with garlic salt, onion powder, seasoning salt and italian seasoning (from Kroger). I browned one side with the oven on 6. Then flipped them over on the other side and turned the oven down to 4 and let them cook for about 3 Beyonce songs (LOL) so about 15 minutes. As they cooked I poured in chicken broth (just enough for the bottom of the pan) and then I poured a little Italian dressing over them. They were so tender and juicy.

Feta Spinach
This was super easy. Cut and put in a skillet on medium until the spinach wilt. Add a little salt and pepper to taste. Remember to cut up double the amount you think you will need because they do shrivel down ALOT! Put on your plate and top with Sundried tomato and basil feta (from Kroger)

Baked Apples
Cut apple in slices and but in a small pan. Add a little apple juice just to cover the bottom of the pan.

Top apples with cinnamon and nutmeg. Bake @ 400° for 1 hour, covered. *Note: The peel is the most nutritious part of an apple…but I didn’t like the peel baked…I suggest taking the peel off before cooking

Pork Loin 211 calories
Spinach 7 calories
Feta 80 calories
Baked apples 160 calories

Total: 458 calories!!!
Awesome for dinner and I’m stuffed!
Compare that to a Whopper with cheese (no sides) at 760 calories!!!

Breakfast: Bacon and Egg Cups

Try these bacon and egg cups.  And they are easy to make paleo friendly!

What you need:

Muffin Pan
Pam or oil
Eggs
Bacon
shredded cheese
whatever else you like in your eggs
salt
pepper

Step 1: Spray muffin pan with Pam (or use oil or non stick pan)

Step 2: Line muffin with bacon, then pour in egg and whatever else you like with your eggs (spinach, cheese, ham, etc)

Step 3: Bake at 350 for 45 minutes or until bacon is done! ( you might bake the bacon for 20 minutes alone first then out of the oven and add the rest of the ingredients if you like your bacon very crispy)

Quickie: Bacon and Spinach Omelette

Good Morning y’all. I’ve got a quickie for you this morning. Dieting sucks when you are always eating the same thing. So I have to mix it up pretty often. Anyways this is a bacon and spinach omelette I made for…brunch. It’.s pretty easy.

Step 1: Cook and cut up your ingredients. I kept it really simple this morning…bacon and spinach

Step 2: Spray your pan with Pam (or use a nonstick pan). Crack those eggs to make a circle base. Spread it out and try not to tear it. Then top should still be runny/ Add seasoning to taste and then top with you filling ingredients

Step 4: While it starts cooking, kind of roll the edges to make sure they don’t stick. Now flip one side over onto the other and when it’s done cooking roll onto your plate. Done!!

A Karyssa Meal: Lemon Bathed Tilapia and Strawberry Spinach Salad Recipe

Hey y’all!!! This is my own tilapia recipe. Feel free to give it a try!! : )

Lemon Bathed Tilapia and Strawberry Spinach Salad Recipe

Step one: Melt butter

Step two: Add your spices. I used lemon pepper, garlic powder, onion powder and lemon juice. Mix. This would be a great time to add vegetables such as onion, minced garlic, or peppers. I was being a bit lazy today so I didn’t add vegetables.

Step three: Put the tilapia in a plastic bag and add your homemade marinade. Place in the fridge for at least 30 minutes so that the fish can soak up all the juices

Step four: While we wait for the fish to marinate…it’s salad time. I used spinach and topped it with sliced strawberries.

Step five: Back to the fish. Spray the bottom of your skillet (I used Pam) or use a nonstick skillet because easily sticks to the pan. Place the fish in the pan. Cook on a medium heat (6 out of 10). Flip as few times as possible so that the fish does not fall apart.

Step six: PLATE IT!!! Make it look pretty! Top tilapia with parsley and top salad with dressing (I used balsamic vinaigrette). This is the final result!
