Cajun Pot Pie

Hey ya’ll,

I haven’t come up with a recipe in a while so I decided I’d give one of my own ideas a try. I wanted pot pie and I wanted to give my boyfriend a taste of home (Louisiana). So I made Cajun pot pie!!

Ingredients:
Spicy Andouille Sausage
Chicken Breasts
Okra
Corn
Onions
Louisiana Cajun Gumbo Mix
Bisquik biscuit mix
Boil In Bag Rice
Butter

Season chicken and cook. Boil sausage. Boil the rice in the same pot as your sausage.

While the meat and rice is cooking, prepare your bisquik mix as the bag instructs.

Combine gumbo mix and 2 qts water or chicken broth. Bring to a boil. Make sure there are no lumps!

Cut up the meat.

Once mixture comes to a boil add meat and veggies. Boil until veggies are done.

Put rice in the bottom of a pan, then spoon mixture on top of it(do not over fill) and cover with bisquik mix. Put in the oven on 450° for 10-15 minutes. Leave a little on the side to add on your plate later.

Jalapeno Cornbread Poppers

What you’ll need for approx. 24 Jalapeno Cornbread Poppers:

12 Med/Large fresh Jalapenos

1 Box of Cornbread Mix (Use Honey variety for the sweetness)

1 1/2 Cup Shredded Cheddar (1 cup for the batter..1/2 cup for sprinkling)

1 Cup Corn..fresh OR canned is just fine

 

Directions:

Slice each jalapeno down the center and carefully remove all the seeds and veins..set aside

In a medium bowl, mix up the Cornbread batter according to the box instructions, add in the Corn and 1 cup of the Cheddar.

Fill each Jalapeno half with some batter! Eh-hem, don’t over fill them! 😉

Sprinkle them all with the remaining 1/2 cup of Cheddar.

Place them on a baking rack & sheet pan, bake them at 350 for about 15-20 minutes, or until the Cornbread is firm and cooked through. They will be puffed and cheesy too!

Loaded Potato & Buffalo Chicken Casserole

Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into 1/2-inch cubes
  • 8-10 medium potatoes, cut into 1/2-inch cubes  (I leave the skin on)
  • 1/3 cup olive oil
  • 1 1/2 tsp. salt
  • 1 TBS. freshly ground pepper
  • 1 TBS. paprika
  • 2 TBS. garlic powder
  • 6 TBS. hot sauce

Topping:

Preheat oven to 500 degrees…Yes you read that right!

In a large bowl mix together the olive oil, hot sauce, salt, pepper, garlic powder & paprika.

Add the potatoes and stir to coat.

Add the potatoes to a greased baking dish.

When scooping the potatoes into the baking dish, leave behind any extra olive oil/hot sauce mix.

Add the diced chicken to the “left behind” olive oil/hot sauce mix and stir to coat all the chicken.  Allow to marinate as the potatoes bake.

Roast the potatoes for 45-50 minutes, stirring every 10-15 minutes, until cooked through and nice and crispy on the outside.

Once the potatoes are fully cooked add the marinated chicken.

In a large bowl mix all the topping ingredients together.

Top the raw chicken with the topping.

Bake until the chicken is cooked through and the topping is melted and bubbly delicious.  Serve with extra hot sauce and/or ranch dressing.
