Almond/Cashew Crusted Dijon Mahi Mahi

So I’ve been eating a lot healthier….but I needed to add some crunch to my life lol so I put a twist on my favorite fish, Mahi Mahi.

Grind some of your favorite nuts (pecans, almonds, or cashews) in a blender or food processor. Don’t over do it though…you aren’t trying to make peanut butter.

Get some pretty planks of mahi mahi

Season them to taste. I prefer garlic herb or lemon pepper seasoning.

Slather the fish in dijon mustard. Or for a healthier choice (which I chose) use Bolthouse Farms Honey Mustard yogurt dressing.

Coat the fish in the nuts.

Put a little olive oil in a pan (just enough to coat the bottom of the pan.) Cook fish until a crust forms. It should be brown but not burnt.

Cheese Stuffed Shells

Boil jumbo shells according to the directions on the box.

Mix 1/2 cup of ricotta cheese, 1/2 cup of mozzarella cheese, and 1/2 cup of parmesan cheese and 1 egg. Then add a little parsley, basil, salt, and pepper to taste.

Cover the bottom of your pan with spaghetti sauce of choice. Top with shells (opening side up). And fill shells with your cheese mixture.

Afterwards, cover top with remaining sauce and sprinkle top with parmesean cheese

Bake at 350° for 20-30 minutes.

Serve with more yummy foods!

Cheesy Garlic Pull Apart Loaf

PREP: 10 mins
COOK: 15 mins
READY IN: 25 mins

Ingrеdiеnts:
1 (8 ounсе) loаf Frеnсh brеаd
1/3 сup grаtеd Pаrmеsаn сhееsе 1/2 сup buttеr, softеnеd
2 tаblеspoons gаrliс powdеr
1 tеаspoon driеd pаrslеy

1. Prеhеаt ovеn to 375 dеgrееs F (190 dеgrееs C).

2. Cut brеаd into 1-inсh thiсk sliсеs, without сutting аll thе wаy through thе loаf.

3. Mix Pаrmеsаn сhееsе, buttеr, gаrliс powdеr, аnd pаrslеy in а smаll bowl.

4. Sprеаd mixturе bеtwееn sliсеs of brеаd аnd ovеr thе top of thе loаf.

5. Wrаp loаf in аluminum foil, lеаving thе top pаrtiаlly unсovеrеd.

6. Bаkе in prеhеаtеd ovеn until buttеr is mеltеd аnd brеаd toаstеd, 15 to 20 minutеs.

Halloween Party Foods

Hey ya’ll

I was going to throw a Halloween party but instead I threw a surprise party for my boyfriend this week (Happy Birthday Ray!)

Since I won’t be using them, I’ve decided to share these Halloween party foods with you!

Vomit Dip

Use avocado or spinach dip and pair it with chips or crackers.

Trail the dip out of the pumpkin to add the gross effect

Blood Jello Shots
This is one of my faves!

Make 1 pkg of strawberry or strawberry kiwi jello according to the box instructions. Then mix in 1/2 cup vodka,

1/4 cup Midori/melon liqueur and 1/4 cup peach schnapps. Draw the liquid up in the syringes and refrigerate overnight!

Cannibal Feast

Gross looking…I know LOL

Get a skull from any arts and crafts store (Hobby Lobby or dollar store) and cover with lunch meat

Use spare ribs as the chest cavity. A bell pepper is the heart, 2 chicken thighs for the lungs, and link sausage for the intestines.

And of course it all has to be slathered in BBQ sauce!

Finger Food

Cut knuckles into mini wieners and also cut the front of the top off. Boil. Add blood (ketchup) to the top and bottom of the wiener.

Add a nail (onion) for the finished look!

Dirty Q-Tips

Large toothpicks with peanut butter (or caramel) dipped marshmallows on both ends

Kitty Litter Cake

 Bake 2 cakes (chocolate and yellow) and crumble. Make 1 box of instant vanilla pudding and chill. Grind 1 package of golden Oreo cookies in a food processor until a sandy consistency. Separate 1/4 cup of the ground cookies in another bowl and mix in five drops of green food coloring. Mix crumbled cake, large portion of ground cookies, and pudding and put in a pan or NEW kitty litter box. Put several unwrapped Tootsie Rolls in the microwave for 12 seconds or until soft; then shape them into poop. Place them in and on top of the cake, randomly, covering some with “litter.” Add the green-specked cookies as scent crystals. Refrigerate until ready to serve.

Pepperoni Pizza Roll Ups

Ingredients:

8 Crescent Rolls

Sliced Pepperoni

Mozzarella String Cheese

Garlic Powder

Butter

Marinara (if you want to get fancy)

 

 

 

 

 

Directions:

Preheat oven to 350 degrees. 

Take each triangle of crescent roll dough and place about 4-6 pepperoni on the bottom of the triangle. Place half of a cheese stick on top and roll up. If you wanna be fancy, put a little marinara in the roll before rolling up. Place seam side down on a cookie sheet and bake for 10-14 minutes or until golden brown.

While rolls are cooking (with about 3 minutes left), spray with butter and dash a little garlic powder on top of the roll ups.

Serve with marinara or ranch for dipping.

 

 

 

 

 

Cajun Pot Pie

Hey ya’ll,

I haven’t come up with a recipe in a while so I decided I’d give one of my own ideas a try. I wanted pot pie and I wanted to give my boyfriend a taste of home (Louisiana). So I made Cajun pot pie!!

Ingredients:
Spicy Andouille Sausage
Chicken Breasts
Okra
Corn
Onions
Louisiana Cajun Gumbo Mix
Bisquik biscuit mix
Boil In Bag Rice
Butter

Season chicken and cook. Boil sausage. Boil the rice in the same pot as your sausage.

While the meat and rice is cooking, prepare your bisquik mix as the bag instructs.

Combine gumbo mix and 2 qts water or chicken broth. Bring to a boil. Make sure there are no lumps!

Cut up the meat.

Once mixture comes to a boil add meat and veggies. Boil until veggies are done.

Put rice in the bottom of a pan, then spoon mixture on top of it(do not over fill) and cover with bisquik mix. Put in the oven on 450° for 10-15 minutes. Leave a little on the side to add on your plate later.

It’s fall and it’s time for some good southern comfort food
What better place to start than apple dumplings!

Ingredients

  • 1 large apple {any apple will do, tart is better}
  • 1 can Pillsbury Crescent dough
  • 1/2 cup butter
  • 2/3 cups sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • 3/4 cup or 6 oz. 7-Up or equivalent {half the can}

Preheat the oven to 350 degrees F. Grease an 8×8 baking dish.

Cut each apple into 8-10 wedges. Slice the apple skin off as well and set aside.

Separate the crescent roll dough into triangles. Roll each apple wedge in crescent roll dough starting at the wide end. Pinch to seal and cover apple and place in the baking dish. {This is easier if you first pat the apple wedge dry, then wrap dough around it.}

Melt butter in a small saucepan and stir in the sugar and cinnamon. Heat, whisking to combine. The mixture will slowly combine and thicken. When it’s thickened, remove from heat and add vanilla.

Pour cinnamon mixture over the apple dumplings. Pour soda over the dumplings.

Bake for 40 to 45 minutes in the preheated oven, or until golden brown.
They’re best when served immediately, with a scoop of Cool Whip or vanilla ice cream.
However if you want to save them for later, be sure to separate the dumpling from the excess liquid that remains after baking.

Caramel Crunch Grapes

Halloween is approaching and you’ll need little finger foods and appetizers for your party. Don’t worry about getting apples. Try these little easy treats!

It’s only 3 Ingredients:

Green Grapes

Caramel, melted

Salted peanuts, finely chopped

And you’ll also need toothpicks

Instructions: Wash and dry grapes. Melt caramel in a bowl and put crushed peanuts in separate bowl.

Put a grape on a toothpick, dip in caramel then dip in peanuts

Serve on platter

CrockPot Smoked Neck Bones

I have to shout out my Aunt Bunny for this recipe. She made it for us when we visited her last week so I had to try it myself!

The recipe is so easy and cheap!! Go to your local grocery store or meat market and buy smoked neck bones. You should be able to smell the smoke through the plastic. Put them in the crockpot and add a little water (only enough to cover the bottom). Cook on high for 3 hours. Then pour a little water off, pour bbq sauce onto the meat, and cook on low for another hour or two. #DELICIOUS

Spicy Shrimp and Chorizo Kebabs

Ingredients

2 large garlic cloves, thickly sliced
2 teaspoons sea salt
2 teaspoons caraway seeds
2 tablespoons pure chile powder
1/4 cup extra-virgin olive oil
2 pounds large shrimp, shelled and deveined
8 small chorizo (about 1/2 pound total), sliced 1/2 inch thick

On a cutting board, using the flat side of a chef’s knife, mash the garlic and salt to a coarse paste. Add the caraway seeds and finely chop them.

Transfer to a large bowl and stir in the chile powder and olive oil. Add the shrimp and toss to coat.

Meanwhile, bring a small saucepan of water to a boil. Add the chorizo and cook over high heat for 5 minutes. Drain and pat dry. Let cool slightly.

Tuck a chorizo slice in the crook of a shrimp and thread onto a skewer; the shrimp should be attached at both ends.

Push it to the end of the skewer and repeat with two more shrimp and chorizo slices.Using more skewers, repeat with the remaining shrimp and chorizo.

Grill the kebabs over a hot fire, turning once or twice, until charred and the shrimp are cooked through, about 5 minutes. Serve immediately.
